Description

On a busy weeknight, put your air fryer to work for a quick and delicious meal that cooks all in one appliance, with easy clean-up. Gently spicy, salty, and tangy Tajín seasoning, sold in grocery stores with Mexican ingredients, flavors both the steak and vegetables. Serve them with store-bought salsa and guacamole, and you’ve got a whole meal that’s ready in minutes. Note that if you have a smaller air fryer, you may need to cut the steak in half and cook it in two batches. The recipe is a Yummly original created by Ashley Strickland Freeman.

  • 2 Tbsp. Tajín® Clásico Seasoning (divided, plus more for serving)
  • 2 Tbsp. vegetable oil (divided)
  • 2 tsp. ground cumin (divided)
  • 2 tsp. ground coriander (divided)
  • 1/2 tsp. freshly ground black pepper (divided)
  • 1 flank steak (1 1/2 lb.)
  • 1 red bell pepper (thinly sliced)
  • 1 green bell pepper (thinly sliced)
  • 1 red onion (halved and thinly sliced)
  • 8 flour tortillas (7-8 inches wide)

    Directions

    1. In a large bowl, combine 1 Tbsp. Tajín seasoning, 1 Tbsp. oil, 1 tsp. cumin, 1 tsp. coriander, and ¼ tsp. pepper. If flank steak is too big to fit in your air fryer in a single layer, cut it in half. Add steak to seasonings and turn to coat well.
    2. Set the basket in place in an air fryer. Close the lid and program the air fryer to 425°F for 8 minutes (for medium-rare meat). Preheat according to instructions for your air fryer.
    3. Add steak to the air fryer basket (cook half at a time, if needed). Set bowl aside, unwashed. Cook steak, turning it halfway through cooking, until it’s done the way you like, about 8 minutes for medium-rare (an instant-read thermometer registers 135°F when inserted into the thickest part). Transfer steak to a cutting board and let it rest 10 minutes.
