This is lovely! I omitted the parsley as I don’t like it and added in some croutons. I’d add a little less mustard next time, but the sharpness of the vinaigrette really works. Letting it soak for 30 mins meant it was flavoursome - highly recommended!!!

Added 2 c. prepared quinoa (idea from the other recipe) - would cut down on onion next time though (stick to recommended 1/2).

Really nice. I put mint in instead of parsley, and left the cheese as a garnish. From my experience, feta doesn't last very well in the fridge.
